Students investigate the endothermic reaction involving citric acid, sodium bicarbonate and water to produce carbon dioxide, water and sodium citrate. In the presence of water [H2O], citric acid [C6H8O7] and sodium bicarbonate [NaHCO3] (also known as baking soda) react to form sodium citrate [Na3C6H5O7], water [H2O], and carbon dioxide [CO2]. Students test a stoichiometric version of the reaction followed by testing various perturbations on the stoichiometric version in which each reactant (citric acid, sodium bicarbonate, and water) is strategically doubled or halved to create a matrix of the effect on the reaction. By analyzing the test matrix data, they determine the optimum quantities to use in their own production companies to minimize material cost and maximize CO2 production. They use their test data to "scale-up" the system from a quart-sized ziplock bag to a reaction tank equal to the volume of their classroom. They collect data on reaction temperature and CO2 production.

In this activity, the sextant is introduced and discussed with the class. Students will learn how a sextant can be a reliable tool that is still being used by today's navigators and how computers can help assure accuracy when measuring angles. Also, this activity will show how computers can be used to understand equations even when knowing how to do the math is unknown.

They apply their understanding of the three forms of heat transfer (conduction, convection and radiation), as well as how they relate to energy efficiency. They calculate the efficiency of the solar water heaters during initial and final tests and compare the efficiencies to those of models currently sold on the market (requiring some additional investigation by students). After comparing efficiencies, students explain how they would further improve their devices. Students learn about the trade-offs between efficiency and cost by calculating the total cost of their devices and evaluating cost per percent efficiency and per degree change of the water.

In this lesson students are introduced to Architect, Jeremy Peang-Meth. Mr. Peang-Meth was asked to design a local, renewable energy source for building located in the heart of New York City. While the tall buildings surrounding the site caused some obvious problems, there were also some benefits to the site. Students are asked to consider the constraints posed by the location of the building and then, based on their analysis of those constraints, to find a roof location that will provide good energy capture from the wind. After they have made that choice, students are invited to view Mr. Peang-Meth’s solution as he presents it in the provided video.
