This resource is a video abstract of a research paper created by Research Square on behalf of its authors. It provides a synopsis that's easy to understand, and can be used to introduce the topics it covers to students, researchers, and the general public. The video's transcript is also provided in full, with a portion provided below for preview:

"In the past 30 years, the number of children who are overweight or obese has increased by nearly 50 percent. Ads for sugary cereals, soda, and other junk foods are thought to contribute to this rise, but few studies have directly measured how much marketing children see in a typical day. Now, using wearable cameras, researchers in New Zealand have done just that, finding that marketing for unhealthy foods outnumbers that for healthy foods by more than 2 to 1. The scientists recruited children attending various schools in Wellington to wear a small camera, or Kids’Cam, that would take snapshots every 7 seconds to capture marketing exposures. The students were about 12 years old and came from different socioeconomic and ethnic backgrounds. Recording lasted for four days, starting on a Thursday to cover both schooldays and weekends. The team reviewed all of the images from the 168 participants, coding each image for any food marketing..."

Giant clams are no myth. In New England, people love clam chowder, but in the Pacific, some of the clams are as big as a suitcase! In this video filmed in Micronesia, Jonathan goes in search of Giant Clams. These clams are so big that people used to think they caught people...and it almost looks like they could. Many young adults and college students begin transitioning into adulthood with distinct deficiencies in their kitchen skills. Kitchen skills are a daily life component useful in safely preparing nutritionally adequate meals. They can also serve the additional purpose of entertainment as a way to grow a love of cooking. These knowledge gaps affect their culinary performances and their abilities to thrive independently in the adult environment. To help fill these gaps, Chosen Ten Instructional Design has created an interactive digital learning course for incoming college students to learn about cooking and managing a personal kitchen. This interactive learning object intends to provide instruction on critical areas of kitchen safety that are relevant to these learners now and will increase their confidence in the kitchen as they progress through life. Consisting of an interactive PowerPoint with infographics, other interactive elements, and videos, this digital learning object has been uploaded to OER Commons, where it can be accessed by both the target learning group and anyone who feels that their culinary knowledge and skills require refreshing.

In this activity students develop a practical understanding of the causes and symptoms of drought. They read background articles and prepare a physical model to illustrate the role that soil moisture plays in preventing or promoting drought. Students use Google Earth to examine precipitation and streamflow data and use them to predict locations that are experiencing drought. They check their predictions by comparing them to a drought monitor map. In the final section, students examine and interpret the current map of the Palmer Drought Severity Index.

America's most famous drought resulted in an environmental disaster called the Dust Bowl. From 1931 to 1939, a five-state region of the Great Plains received little rain and experienced horrendous dust storms that stripped the land of its topsoil. The event went on to shape the demographics of the American West as thousands of people migrated out of the plains and on to western states.
In this activity, students will watch a PBS video and/or interact with the video's companion website. They will also examine maps and animations that show the distribution of drought patterns over the past 300 years; these maps were reconstructed from environmental records. Finally, students will examine the amount of time different areas spend in drought.

Aquaculture is the most rapidly growing food-production industry in the world. In Part A of this investigation, students examine and analyze U.S. and global aquaculture data from the Food and Agriculture Organization of the United Nations (FAO) Fisheries and Aquaculture database. In Part B, students examine global trends in aquaculture production and learn about aquaculture methods and their associated environmental impacts. In Part C, students use Google Earth to analyze before and after satellite images of the Pacific coast of Honduras to illustrate how aquaculture is altering coastlines.
