This lab manual is designed for the upper division and graduate sports nutrition courses, covering, supporting, and reinforcing fundamental nutritional concepts. This manual provides hands-on experience that will help strengthen student’s knowledge and application of the material. Labs focus on learning areas of exercise intensity and substrate utilization, measuring glycemic responses to selected food items with or without exercise, designing sports drinks and testing rehydration responses, and metabolic health. "Radiation, weightlessness, and altered nutrition are just a few of the harsh conditions astronauts face while in space. Though blood parameters _do_ change during space flight, a new study published in the journal, _BMC Hematology_,_ _suggests crews on long missions may not experience persistent anemia, as once thought. Environmental conditions in space are undoubtedly different from those on Earth, and can, therefore, impact a number of the body’s systems including vision, immunity, and the musculoskeletal system. It is well understood that, upon entering microgravity, fluids rapidly shift toward the head -- evident by the so-called ‘puffy-face syndrome’ seen in many astronauts. It has been assumed that during long-duration space missions, this is accompanied by a state of anemia – a condition that occurs when the body fails to produce a sufficient levels of oxygen-carrying red blood cells and can result in weakness and fatigue..."

"Before you reach for that sugary beverage at dinner tonight, consider this: consuming just one sugar-sweetened drink with a meal not only adds calories to your diet, it also reduces the body's metabolic efficiency. That’s the finding of a new study published in the journal, _BMC Nutrition_. There is increasing evidence that the macronutrient composition of the diet may be more important in preventing obesity than previously thought. In other words, it’s not just _how much_ you eat, but also _what combination_ of foods you eat that’s important for maintaining a healthy body weight. Obesity has become a world-wide epidemic. In the US, the increased prevalence of this disease has been linked to the American diet, in which sugar plays a starring role. To better understand this, a team of USDA researchers set out to determine how adding a small serving of a sugar-sweetened beverage to meals impacts appetite, food preferences, energy expenditure, and the ability to burn fat..."

Students conduct an experiment to determine whether or not the sense of smell is important to being able to recognize foods by taste. They do this by attempting to identify several different foods that have similar textures. For some of the attempts, students hold their noses and close their eyes, while for others they only close their eyes. After they have conducted the experiment, they create bar graphs showing the number of correct and incorrect identifications for the two different experimental conditions tested.

The suppression of bacterial growth in food keeps our food supply safe.  However, there are also helpful bacteria in many foods and in our bodies.  Understanding how to control the growth of bacteria is important for both keeping harmful bacteria from growing and promoting the growth of welcome bacteria.  In this series of lessons, students will learn what bacteria need for growth and how to prevent that growth.  Students will be growing harmful bacteria on bread and helpful bacteria in yogurt.

In the capstone, Unit 3, students are provided a real-world example of local community action to address the challenge of "healthy food access." The 2015 Leon County (Florida) Sustainable Communities Summit highlights the results of communities working together to promote environmental and food justice. By the end of Unit 3, instructors can deliver a call to action to empower students to be participatory citizens in their communities. The summative assessment will evaluate the students' ability to synthesize the module learning objectives and demonstrate the use of science practices.
