This presentation focus on which role nutrition plays in developing diabetes and how obesity affects diabetes development. Obesity and weight gain dramatically increase the risk of developing type 2 diabetes. But it’s not only the total calorie intake and the BMI that counts, so does the distribution between fat, protein and carbohydrates, in other words the composition of nutritions. In continuation of this it will be discussed how a restricting intake of carbohydrates might be the way to reduce or even eliminate the use of medication in diabetes treatments.

The overarching goal of this exercise is for students to explore the early anthropogenic hypothesis, which claims that early agriculture had a substantial impact on greenhouse gases and global climate thousands of years ago (Ruddiman, 2003). Students compare changes in greenhouse gas concentrations that occurred thousands of years ago to more recent changes that occurred over hundreds of years. Students also relate changes in greenhouse gas concentrations to warming. The exercise is completed over a 1.5- to 2-week period as the class covers a chapter on climate change.

"Nutrient-poor diets can increase the risk of neurodegenerative diseases such as Alzheimer’s, and diets poor in fiber are widespread, especially in industrialized nations. However, whether fiber deficiency—which alters the gut microbiota—impairs cognition through the gut–brain axis remains unclear. To find out, researchers recently analyzed mice fed a fiber-deficient diet for 15 weeks. Compared to normal mice, the fiber-deficient mice exhibited cognitive impairment and were unable to complete typical activities like nest organization. In addition, the synapses in the brain area regulating cognitive function were damaged, and neuroinflammation occurred. Immune cells called microglia (indicated by Iba1) engulfed synapses (indicated by PSD-95) in the fiber-deficient mice. Furthermore, the fiber-deficient mice exhibited gut microbiota disruption that was associated with, and possibly responsible for, the cognitive deficits..."
