The purpose of this course is for adults to advance their personal health. People generally have a good sense about what to do to be healthy, but actually doing it consistently is another matter. Because of this challenge, behavior change theory is applied throughout this course to engage students and evoke health-related change. It also details the digestive process, the digestion and absorption of macro and micronutrients including vitamins, minerals and phytonutrients. The course also examines the role of cultural factors, biochemical signals and psychological factors such as stress in eating habits.
